This coffee has a fruity and pleasantly sweet profile. In the cup, you’ll find notes of strawberries and red grapes, complemented by apples and red plums, bringing freshness and a light acidity.
Alejandro Martinez Anaya owns a 250-hectare farm called San Jose, where 60 hectares are planted with the Anacafe 14 variety alongside other coffee varieties. Coffee is harvested only at full ripeness and fermented in cherry for about 18 hours. The next day, it is depulped, washed, and dried in an elba drying house for 32 days. Mexican coffee stands out for its abundance of Fair Trade and organic certifications, especially in regions like Oaxaca, Veracruz, and Chiapas. Indigenous cultures have strongly influenced the adoption of organic farming practices.
